Pick It And Stick It: Saturday Spells Relief

hqdefault

Welp even though I missed last Saturday due to some sweet Austin City Limits Music Festival action, I was able to see some of the destruction.  Man oh man, last week is what makes college football so special.  Upsets a plenty.  So college football needs some relief and we have it coming up this weekend.  Yeah I’m a weekend two for ACL but I’ll be hoping to catch a bit of sweet football while it’s going on.

Pick It And Stick It: Shpilkis In My Genechtagazoink

SNL_0808_Coffee_Talk_EST

Oy Vey! This weekend of college football will be like buttah!  And that’s enough Saturday Night Live reminiscing, because I’m just tired of that show anyway.  We still have college football, but no football feedings again.  I’ll be doing my darndest to watch but there may be gaps.  Guptah!

Pick It And Stick It: Gotta Chop That Wood

splitting-wood-2_main_banner

It’s not as goofy as you think.  But there are some teams this week looking to bounce back after some tough losses in there last game and they gotta stay focused.  You can’t look away from the wood whilst you chop it, you have keep on it and keep chopping.  So this week’s Pick It And Stick It will sharpen that axe for Week 4.  Let’s do this. Football Feedings 2014 Week 04: Grilled Jerk Salmon

img_0757

What a weekend it was.  A loooong weekend.  Yup my team played on a Thursday night so it’s a long distance feeding.  But that didn’t mean I didn’t pay attention to the games and fun on Saturday.  So sit right back, crack open a coffee drink and let’s go on a long trip of food and college football.

Pick It And Stick It: Where The Biggest Game Is On A Thursday

bsfs

Yeah, it’s early in the season but that’s not the reason why tonight’s game is so huge.  We are not going through a blah weekend like last weekend, which turned out to be surprisingly tasty.  Nope, it’s the biggest because it’s the most anticipated game since the end of last year.  It has the highly ranked Auburn Tigers going to Manhattan, Kansas to play the ranked Kansas State Wildcats.  Buckle up….

Football Feedings 2014 Week 03: Freaking Awesome Fajitas

img_0715

Another week of college football is in the books and it was a weekend where Kansas State didn’t play.  They are getting ready for Auburn this Thursday.  So to make up for it, I decided to go with something a little more colorful for food.  And boy did it ever come through.  It’s fajita time.

I basically took this recipe from Apple and Sparkle.  What I did different, however, is what knocked it out of the proverbial food park.  I added some liquid smoke and cinnamon for the marinade on the sirloin (not skirt) steak.  I also added some pineapple and hatch peppers to the grill list.  It was absolutely fantastic.

Marinade

  • 1/3 c. soy sauce
  • 1/3 c. fresh squeezed lime juice
  • 1/3 c. canola oil
  • 3 cloves of garlic, minced
  • 2 T. brown sugar
  • 1 t. cumin
  • 1 t. chile powder
  • 1 t. liquid smoke
  • 1/3 t. cinnamon
Fixins
  • about 2 lb. sirloin steak
  • 2-3 bell peppers, ends trimmed, cored and seeded, cut into a couple large pieces
  • 1 large white onion, peeled and cut into 1/2-3/4-inch slices (keep the slices intact)
  • 4 slices of pineapple
  • 2 hatch peppers
  • 6 6-inch flour tortillas
  • lime wedges
  • toppings of your choice such as, cilantro, salsa, cheese, sour cream  & avocados or guacamole

1. Get the marinade prepared: Whisk together the marinade ingredients in a small bowl. Reserve about 1/3 cup of marinade for the vegetables. Place the steak in a gallon-sized ziplock bag. Add the remaining marinade. Seal the bag, pressing out any excess air, massage the marinade into the meat a bit. Refrigerate anywhere from 3-10 hours.
2. After meat has finished marinating, remove steak from marinade.  Brush the vegetables with reserved marinade. Heat your grill to high. Add the steak to the super hot grill and grill, covered about 2 1/2 minutes per side, or however pink you want it.  Remove steak to a clean plate and cover with foil & let rest for 10-15 minutes.
3. Add the peppers, pineapple,  onions to the grill and grill, turning occasionally until cooked, peppers should take about 5 minutes and onions will take about 10. Remove from grill. Briefly add the tortillas to the grill, a couple at a time and grill until warmed and lightly charred around the edges. Wrap the tortillas in foil to keep warm.
4. Thinly slice the steak, against the grain. Slice the onions in half and separate the rings. Slice the peppers. Serve with the tortillas, lime wedges and toppings of your choice.
It rocked my world.  I had it with Aloha Pina from 5 Stone Craft Brewing Company.  The pineapple and jalapeno flavor in the beer worked perfectly with the fruits and vegetables in the the fajita.  The steak was cooked just to perfection.  My only complaint with the whole setup is that I wised that the tortillas were bigger so I could fit more on to them.

Now on to football, where the day was just big enough for the Big 12.  I predicted in the Pick It and Stick It that the Big 12 would go 5-4.  Welp that did one better and went 6-3.  It could’ve been better as Texas almost upset UCLA, but they fubbed a coin toss and set the tone for that game.  The big surprise came out of West Virginia for me.  They beat Maryland on a last second field goal.
So the Big 12 did not crap the bed.  In fact, they held their own.  Just look at the Pac 12 where USC choked and lost to Boston College.  Or the SEC where Georgia choked against South Carolina.  It seems that, barring anything super crazy, the Big 12 will have  a representative in the college football playoff.  And if Kansas State can upset Auburn this Thursday, it may just be them.

Pick It And Stick It: Please Don’t Crap The Bed, Big 12

nobedcrap

With Kansas State not playing a game until a week from today, I’d figure I wouldn’t talk too much about the games coming up this weekend.  But then last week the worst of the worst happened to Big 10 and it compelled me to peak at what the Big 12 had coming up this week.  So I’m going to do my best to break down the games and hope to all that is holy that this Big 12 comes through clean. Football Feedings 2014 Week 02: Super Stuffed Biscuits And Gravy

img_0644

It’s Farmageddon week and there’s no better way to kick off the second week of college football than with some early morning vittles.  So this week we went with some biscuits and sausage gravy, but with a twist.  We will make a meal and STUFF it in the biscuit before we cook it.  It’s the only real way celebrate Kansas State and Iowa State’s farm bred rivalry.  Let’s do this. Pick It And Stick It: Morning Farm Time

farmageddon2014

I grew up in Kansas, but I’m no farmer.  Shocking right?  Well not really, but I have grown to love the rivalry that started all Great Plains rivalries.  Yup, I’m talking about Farmageddon.  It’s yearly tradition where Kansas State takes on Iowa State.  It’s also very early in the year.  It’s like getting up at the crack of dawn for the college football year’s day.  There’s other games, too so let’s get started. Football Feedings 2014 Week 01: Armadilla Pork Ribs

img_0541

Hey you know, why not?  I thought about not doing one of these this year but I’ll be damned if I didn’t get an electric grill for my birthday.  So now I have plenty of new recipies to try out this fall.   With that said, I’m back and the grill is hot!  This week we’ll do something I’ve been itching to do for a long time, both main and side dish wise. Kansas Football Preview 2014: Hey, There’s Hype To Live Up To

JakeWatersKCCGD

Hey it’s another year of football for Kansas State and it’s a weird time to be a fan.  Usually Kansas State comes in underpicked, underestimated, and just generally dumped on.  Welp this year is different.  The Wildcats ended the year strong with an even stronger win over Michigan in the bowl game.  Now all of the sudden the pundits and spineless sports media are picking Kansas State to finish well.

It’s a weird feeling.  If any fan, and team, watches and plays better with a chip on their shoulder, it’s Kansas State.  So now it’s time to act like we’ve been there.  Yes, we have, but that added extra juice of being the underdog is gone.  What’s a K-Stater to do?  I guess the best thing is to do what got you to this point.

For us fans, that means cheering loud and staying proud.  Pretty easy.  For the football team, that means Jake Waters tossing bombs to Tyler Lockett.  That’s pretty easy, too, actually.  It helps that there’s this sexy stats the pundits refer to that each returning Wildcat quarterback leads the team to 11 wins (minus the early Snyder teams).  So Jake Waters has that going for him.

You know what else he has going for him?  Collin Klein.  No no, he’s not playing for the team again, he’s COACHING them.  While you can’t teach those kind of running instincts, Collin Klein can at least give direction.  And that’s exactly what he’s doing with Jake Waters.  Dark horse Heisman right there.  I expect Jake Waters to do great, great things this year.  More so than Tyler Lockett, although he’s right up there.

The offense sort of has questions elsewhere.  There’s a decent group of wide receivers coming back, even though Daniel Sams took off after losing the quarterback job.  The running back situation will be a committee until someone shows up.  I hope its fast.  There’s a polarized set of experience on the offense line and I hope they gel fast too.

I’m not sure what’s up on defense.  Ryan Mueller is the man on the defense line (and former St. Thomas Aquinas alum, like me).  That’s about all I know.  There’s a couple of JUCO transfers that will help out immediately and we’ll have to see what the team looks like when they take the field today.  Chances are, they will be fundamentally sound but not the biggest and fasted.  Just like the last couple of years.

So speaking of games, how do I see the Wildcats this year?  After last year’s fist game turd, I expect them to punch the ball in quicker and grow a bigger lead in the first half against Stephen F. Austin and then let up on the peddle a bit.  They won’t be vanilla the whole game.  Not with what’s coming up next.

Right after that, it’s a brutal stretch.  Farmageddon is next, then Auburn.  Iowa State will be better on the offensive side of the ball  now that they got Mark Mangino as the offensive coordinator.  And it’s on the road.  Even though it wasn’t close last year, it will be this year.  Kansas State will win.

Auburn is the big tomato.  At least it’s in Manhattan.  I get the feel from Tigers fans that they are scared about this one.  They should be.  But for some reason, all of the hype surrounding Kansas State this year has at least alerted them to the danger that is the Wildcats.  Which means the team will be ready.  Will Kansas State be ready? Yes.  Will they lose?  Unfortunately, yes.

So what does the rest of the schedule look like?  Let’s run it down.  They come back down to Earth and beat up UTEP.  Texas Tech is in Manhattan so that’s a Wildcat victory.  That Oklahoma game is a toss up because they are getting overrated too.  I’m going with a loss there.  They will beat Texas and Oklahoma State in Manhattan.  They will beat TCU and West Virginia on the road.  They will roll Kansas.

So that leaves Baylor.  On the road.  Hey guess what?  I’m going to the game!  New stadium.  Last game of the year.  Will it be for the Big 12 title?  I sure hope so.   My guess is that it will have huge implications on the Big 12 title.  That’s good enough for me.  Because I just don’t think Kansas State can keep up with Baylor.

Which means I’m pretty much going chalk this year.  Weak, isn’t it?  That’s what happens when the hype matches where I actually think the team will be, which is about 3rd in the conference with 3 losses.  Now what bowl game that will be,  I don’t know.  I hope it’s close to Austin so I can finally see the Wildcats in a bowl.  But until then, I’ll keep cheering loud and staying proud.  Go Wildcats!

Pick It and Stick It 2014 Week 01: I Saved Faced By Waiting Until Today

southparkkennyfootball

It’s an easy method to take advantage of.  Yesterday in my Dart Picks for the year, I explained that I was too busy/lazy to get anything together.  That helped me avoid the blowout out by (shudders) Kenny Football and Texas A&M over South Carolina.  I’m already up on the year!  Let’s see what that cache will garnish me here for the rest of the kickoff weekend. Dart Board Predictions for 2014: From The Ashes Comes A New Set Of Arrows

dartsmorgue

Hey guess what?  I’m back!  No Purple Yeti Roar, no previews (yet), and not much fanfare.  Let’s be real here, I’m distracted by the the Kansas City Royals actually being in a pennant race.  But also I’m tired of the vlogging business.  Plus the picks and the feedings felt a bit tired.  But I’m back regardless with some tasty predictions. Purple Yeti Roar 99: We’ll Miss You Mack

Yup, Mack Brown resigned from Texas.  Speaking as a K-Stater, I will miss him.  He was so easy to coach against. Watch me talk about that, Nick Saban, BCS National Championship Game, Sugar Bowl, Buffalo Wild Wings Bowl, Alamo Bowl, Oregon, Kansas State, Michigan, Brady Hoke, Devin Gardner, Daniel Sams, Jake Waters, Oklahoma, Alabama, Missouri, Oklahoma State, Big 12, SEC, and Jamies Winston.
